Tortino di riso in giardino

Non mi sembra ancora possibile ma ieri era davvero la pirmavera. Mi sono alzata di buon’ora e ho iniziato un po’ di lavori in giardino, faccende che ormai rimandavo da troppe settimane e che hanno preso il sopravvento sotto forma di urgenti pulizie pasquali. Di solito ci sto più attenta, ma presa da un certo entusiasmo primaverile, ho acceso il tosaerba qualche minuto prima delle 8, contando sul fatto che essendo lunedì tutti i vicini fossero già usciti o quanto meno belli svegli. Spero di non aver rovinato il sonno a qualche negoziante nel suo unico giorno libero, posso aggiungere però a mia parziale discolpa che si e no mezz’ora più tardi qualcuno potava gli alberi nelle vicinanze con tanto di motosega… L’aria era limpida ma non troppo fredda, e nell’arco della mattinata il sole mi batteva sulla schiena sempre più caldo e bello. Ho rinvasato qualche piantina, sistemato le rose già piene di foglioline, osservato e trapiantato getti nuovi, orientato con orgoglio certi rami di piante un po’ cresciute.
Ho finito verso l’ora di pranzo e per godermi del tutto il lavoro fatto e la temperatura invitante, c’era bisogno di un piatto unico, semplice e leggero, preparato con quel che avevo in frigorifero.
Tortino di riso freddo con radicchio e mimosa d’uovo
Ingredienti (per 4 tortini)
220 gr di riso
1 radicchio grande
3 uova + 1 uovo sodo
poco extra vergine
acqua
sale
Preparare un uovo sodo.
Lavare il radicchio e tagliarlo a striscioline sottili, farlo appassire per dieci minuti in padella a fuoco basso con due cucchiai di extra vergine e una presa di sale.
Lessare il riso in acqua salata, scolarlo e sciacquarlo velocemente sotto l’acqua fredda. Metterlo in una terrina e condirlo con poco olio e metà del radicchio, eventualmente aggiustare di sale.
Intanto in una ciotola sbattere leggermente le uova con poco sale, metterle in una padella leggermente unta e farle cuocere mescolandole e spezzettandole con un cucchiaio di legno. Far raffreddare un po’ e aggiungerle ben sminuzzate al riso col radicchio e mescolare bene.
Sistemare il tutto in quattro stampini, poi servirli rovesciandoli sul piatto e guarnendo con il radicchio rimasto e il tuoro dell’uovo sodo sbriciolato tra le mani.
