L’altro giorno al mercato ho preso un paio di stinchi di maiale che non avevo mai comprato nè cucinato. Non ero in cerca di nulla in particolare e giravo tra una bancarella e l’altra semplicemente impiegando quei cinque minuti di tempo che mi ero presa prima di andare a lavorare. Ho chiesto al signore della macelleria qualche suggerimento su come farli e lui mi ha detto ‘al forno! oppure alla birra, in pentola, come li cucinano in Germania’. Io come al mio solito ho mischiato un po’ le cose e li ho cucinati al vino bianco, poi ci ho piazzato due contorni, uno perchè mi sembrava d’obbligo, l’altro per vera voglia di sperimentare.
Stinco di maiale al Sauvignon con patate al forno e peperoni agrodolci
Ingredienti (per quattro persone)
per la carne:
2 stinchi di maiale (circa 1,4 kg)
sale&pepe
rosmarino fresco o essicato
poco extra vergine
poca farina 00 per infarinare
400 ml di Sauvignon blanc (o altro vino bianco secco non aromatico e di qualità)
per i contorni:
4 patate medie a pasta gialla
olio extra vergine
sale
2 peperoni (uno giallo e uno rosso)
un mazzetto di cipollotti (saranno stati 7 o 8)
extra vergine
sale
30 gr di zucchero
30 gr di aceto di vino bianco o rosso (il mio era un Jerez poco invecchiato, dal colore ambrato)
Sciacquare gli stinchi sotto l’acqua corrente, cospargerli generosamente con sale, pepe e rosmarino e massaggiarli per qualche minuto. Infarinarli leggermente e iniziare la cottura in una casseruola con un fondo di extra vergine. Farli rosolare piano piano da tutte le parti e dopo qualche minuto iniziare a bagnarli con poco vino alla volta. Coprire poi col coperchio e proseguire a fuoco lento per un paio d’ore, sempre aggiungendo il vino un po’ per volta, rigirandoli di tanto in tanto ed eventualmente aggiustando di sale.
Accendere il forno a 220°. Sbucciare le patate e tagliarle a cubetti, passarle sotto l’acqua e asciugarle in un canovaccio. Disporle in una teglia rivestita di carta da forno, salarle e condirle con circa quattro cucchiai di extra vergine, mescolarle bene e infornare per circa mezz’ora, avendo cura di girarle ogni tanto controllandone la cottura. (In questo caso io le ho lasciate neutre perchè servivano così, ma come è ovvio si possono aromatizzare con erbette e spezie a piacere)
Pulire i peperoni privandoli di tutte le parti bianche e dei semini, sbucciare i cipollotti e lavare il tutto molto bene. Tagliare entrambi a pezzettoni e mettere i peperoni in padella con il coperchio con sale e olio per un quarto d’ora circa (molto dipende dalla consistenza dei peperoni). A metà cottura unire anche i cipollotti. Sciogliere in una ciotolina lo zucchero con l’aceto e versare in padella. Far consumare il liquido per un’altra decina di minuti, controllando che non attacchi o caramellizzi troppo.
Questo piatto è estremamente stuzzicante e gustoso, potrebbe essere una buona idea per il pranzo di Pasqua nel caso non piacciano le carni ovine.
In abbinamento un Cabernet Sauvignon di buon grado alcolico e tannicità potrebbe essere molto adatto anche per una certa vicinanza aromatica. Io l’ho accompagnato ad un ‘taglio piemontese’ di nebbiolo e barbera che -chissà- potrebbe anche meritare un post a parte.
