Quiche di mele dolceruvida

Io i dolci proprio non li so fare, non ho abbastanza pazienza nel seguire le ricette, spesso tendo a reinterpretare e fare le dosi a occhio con risultati che si possono immaginare, ho passato anni a fare sempre e solo la stessa crostata (con alla base una reinterpretazione di pastafrolla, appunto) in cui l’unica variabile era il tipo di frutta e/o il gusto della marmellata. Capita però che ogni tanto, cercando e sperimentando qualche soluzione un po’ alternativa ma davvero semplicissima e iper veloce, ne esca qualcosa di proprio buono. E’ il caso di questa torta con la pasta sfoglia, fatta seguendo il procedimento per una normale quiche salata e che come per le quiche salate dà innumerevoli possibili combinazioni tra gli ingredienti, con infinite variabili di risultato. Tra le altre cose, questa volta io ho usato lo zuchero di canna grezzo e dei biscotti artigianali con farina integrale, ottenendo così un effetto dolce e ruvido davvero interessante.
Quiche di mele dolceruvida
Ingredienti
1 rotolo di pasta sfoglia
1 mela golden
40 gr mandorle
2 biscotti frollini
1 manciata di uvetta
2 uova
80 gr zucchero di canna
100 ml panna fresca
Scaldare il forno a 180°. Sistemare la pasta sfoglia in una tortiera rivestita di carta da forno. Sbucciare la mela, tagliarla a cubetti e disporla qua e là sulla sfoglia, sparpagliare anche le mandorle, l’uvetta, e i frollini sbriciolati grossolanamente tra le mani. In una terrina sbattere le uova con lo zucchero (che essendo grezzo non si scioglierà del tutto) unire la panna e mescolare bene, poi versare anche questo composto sulla sfoglia, livellare bene, piegare leggermente i bordi verso l’interno, e infornare per circa mezz’ora.
Si può servire sia fredda che tiepida, ma il consiglio è di farla riposare qualche ora. Di sicuro è ancora più buona insieme a una pallina di gelato alla cannella.

ho comprato una passata di mele in un negozio macrobiotico, in realtà per farci colazione, ma non mi ha sconvolto, così pensavo di riutilizzarla.

Pensavo panzerottini con la pasta, nel forno, tipo mini strudel, senza uvetta (non tu!) però, con le noci.

Papavero di campo, misteri del web…non c’è ricetta che non venga (quasi sempre) ritoccata e personalizzata, il chè -hai ragione- è proprio una fortuna!
Robiciattola, la tua idea di tortine con la sfoglia e le noci mi sembra molto adatta. Altrimenti mischiala ad una panna montata e facci un millefoglie alla cannella.
Sinceramente io preferisco queste belle torte “ruvide”, come dici tu, rispetto ad una torta della foresta nera, tanto per rendere l’idea. La prossima volta che faccio la torta di mele (simile alla tua) mi ricorderò di metterci anche dei biscotti. Buon WE

Per l’abbinamento, visto che si tratta di un dolce a pasta lievitata, arricchito con spezie e frutta secca, ci vuole un bianco dolce e di grande morbidezza, leggermente invecchiato così da assumere toni aromatici ugualmente fruttati e speziati. Visto che si tratta di una ricetta friulana, punterei all’abbinamento territoriale con un Ramandolo Docg che dovrebbe essere l’ideale :-)
