Recentemente sto inserendo in dispensa e nella mia alimentazione, alcune preparazioni bio o naturali, cioè in qualche modo ‘più sane’ di prima. Mi capita spesso per pranzo di mangiare solo verdure, crude e cotte, in quantità; mi capita di integrare la colazione con il germe di grano, di non volere più la carne, di desiderare piatti leggeri con la stessa gola con cui guardo le briosche al cioccolato o la saint-honorè, o facciamo pure l’intera vetrina della pasticceria sotto casa. Così il negozio bio più vicino ha acquisito una nuova cliente, ormai mi passano la rivista gratis, mi fanno grandi sorrisi e lunghi scontrini :) Ho scoperto anche questo sito qui che devo assolutamente sperimentare. A pranzo sto mangiando di nuovo da sola, come un tempo. La famiglia si raduna a cena, e lì ci concediamo qualche stravizio in più, ma devo dire che mi sto sorprendendo ad assaporare la tranquillità della casa e la bontà del filo d’olio a crudo sull’insalata o sul piatto unico, e la gioia di essere sola ma non in solitudine.

Oggi il menù prevede l’utilizzo di questi Spaghetti di farina di Farro Triticum Dicoccum integrale, prodotti nella linea Montebello dei Grani Antichi dalla Cooperativa Alce Nero. Ventisei ore di essicazione a basse temperature ne garantiscono l’apporto di nutrienti praticamente intatto rispetto al cereale fresco. Perfetti, bellissimi e superbiologici.

Spaghetti di farro con crema di piselli e mozzarella

Ingredienti per porzione

60 gr Spaghetti di farro integrali

3 cucchiai di piselli freschi sgusciati

1/2 mozzarella fior di latte fresca

olio extra vergine di oliva

fior di sale

pepe bianco

Sgranare i piselli, lessarli in acqua leggermente salata fino a cottura, poi spostarli nel bicchiere del mixer a immersione e frullarli con un po’ d’acqua di cottura, un filo d’olio extra vergine, fior di sale e pepe bianco macinato al momento, fino ad ottenere una crema non molto densa ma fluida, ruvida e granulosa. Tenere in caldo. A parte cucinare gli spaghetti in acqua salata e scolarli al dente. Sprigioneranno un profumo che dà benessere. Condirli con poco olio extra vergine e impiattare con la crema di piselli alla base, e la mozzarella fresca sfilacciata tra le mani. L’effetto caldo-freddo è benaugurale per l’arrivo della primavera :)
