Profiterol all’arancia e altre dolcezze…

Ieri è scoppiata la primavera, così, di botto…al mattino pioveva un diluvio e al pomeriggio il cielo si è fatto completamente azzurro, quasi blu e la luce non era la semplice luce del sole ma era la luce della bella stagione, della rinascita, dell’inverno definitivamente finito. Io ero in macchina con la mia piccola e le ho spiegato di guardarsi attorno, di erba appena nata e gemme sugli alberi e fiori in boccio, le ho raccontato di cambi di luce e sole alto, aria tiepida e giornate più lunghe. Lei dal seggiolino posteriore sembrava annuire, lo sguardo verso il finestrino, il ciuccio in bocca e l’aria assorta come in grandi pensieri, più grandi dei miei. E su tutto questo l’autoradio che metteva in musica un frammento della nostra nuova vita insieme.
Poi, una volta a casa ho iniziato ad elaborare questo dolce, oltre ad altri altissimi e romantici pensieri. Mentre Beatrice giocava a terra con le mele e le arance come palle da rincorrere gattonando veloce veloce. Il dolce serve per la Moscatomerenda di oggi pomeriggio in enoteca, da abbinare in particolare al Moscato giallo passito Serenade Castel Giovannelli di Kelleri Kaltern 2004 (ne avevamo già parlato qui). Il nostro panel di degustatori sta approvando sentitamente l’abbinamento e devo dire non con falsa modestia che il profiterol è buono, ma il vino è spettacolare, di un colore a dir poco affascinante e luminoso, profumatissimo, dolce e buono-buono-buono!
Profiterol all’arancia
per questa volta ho usato i bignè già pronti acquistati in panetteria ma non è che mi abbiano dato grande soddisfazione, molto meglio farli- anche il giorno prima- con la ricettina che c’è qui
Ingredienti (dosi per un profiterol formato da una cinquantina di bignè)
per la crema (liberamente tratta dal cavoletto)
200 gr di succo d’arancia
2 arance (la buccia grattugiata)
75 gr di zucchero
4 uova
180 gr burro
25 gr di farina
per la crema al cioccolato di copertura
200 ml di panna fresca
170 gr di cioccolato fondente extra bitter
2 zollette di zucchero
Grattugiare le buccia delle arance senza la parte bianca. Spremere e filtrare il succo, mettere in un pentolino sul fuoco e portare ad ebollizione. Intanto battere le uova con lo zucchero in una terrina, unire la farina e non appena il succo d’arancia è ben caldo versare il composto nella pentola e mescolare continuamente a fuoco basso finchè la salsa non si addensa. A questo punto spegnere e incorporare il burro fino ad ottenere una bella crema liscia e brillante. Raffreddare a temperatura ambiente e mettere in frigorifero coperto dalla pellicola o in un contenitore ermetico. Utilizzare una volta che la crema sia ben fredda.
Per la ganache mettere in un pentolino la panna con lo zucchero e portare quasi ad ebollizione. Appena ben calda spegnere e sciogliervi il cioccolato mescolando bene. Raffreddare per un’oretta prima di utilizzare.
Mettere la crema all’arancia nel sac à poche e riempire i bignè forandoli nel fondo con il beccuccio. Bagnarli nella crema di cioccolato e posizionarli nel piatto da portata. Procedere fino ad aver terminato la crema. Poi mettere la ganache nella siringa da dolci e guarnire il profiterol generosamente.
che belle le tue ricette…anche io sono una grande appassionata di cucina e vini…ho servito i profiteroles (home made, farciti di panna e scorza di arancia ed ovviamente ricoperti di cioccolato fondente) a dei colleghi invitati a cena qualche settimana fa e sono rimasti esterrefatti…ci vuole così poco per prendere gli uomini per la gola!!! ti seguirò sicuramente…prossimo esperimento il ‘pane al forno’
