Polpettone con scarola e pinoli

Premettendo che io il polpettone non lo avevo mai fatto prima e nemmeno visto fare, ecco quello che penso sia un polpettone, anche se pensandoci forse questo sarebbe di più un rollè, mentre il polpettone vero non è così arrotolato ma contiene il ripieno tutto concentrato all’inteno e la carne tutta come involucro esterno. Comunque credo di aver visto una ricetta simile realizzata in qualche trasmissione tv e che mi sia rimasta in mente come ‘cosina da provare’ insieme a mille altre viste di recente. Il risultato è buono, per niente asciutto come spesso è intrinsecamente il polpettone, perfetto da servire con delle patate arrostite o volendo anche con un invernalissimo e fumante purè. La scarola con la sua nota appena amarognola e la crosticina appetitosa della carne chiamano a gran voce un bicchiere di birra chiara, luppolata, fresca e poco alcolica.
Polpettone con scarola e pinoli
Ingredienti
400 gr di macinato di vitello
1 uovo intero
1 pianta di scarola grande
1 spicchio d’aglio
sale
olio extra vergine
1 manciata di pinoli
poco pangrattato
Lavare bene la scarola, tagliarla e metterla in padella ancora umida ad appassire con un filo d’olio e uno spicchio d’aglio. Salare e far cuocere per circa un quarto d’ora con il coperchio a fuoco basso. Intanto impastare la carne macinata con l’uovo e una presa di sale. Impastare per qualche minuto fino ad avere una consistenza compatta, poi depositare l’impasto su un foglio di carta da forno e appiattirlo leggermente. Coprire con un altro foglio di carta da forno e spianare il composto con il mattarello cercando di ottenere una forma rettangolare, dello spessore di mezzo centimetro o poco più. Togliere il foglio superiore e disporre uniformemente sulla superficie dell’impasto la scarola cotta, eliminare l’aglio, e lasciare un po’ di bordo tutt’intorno. Distribuire una manciata di pinoli tostati in padella, ed eventualmente salare leggermente. Sempre con l’aiuto della carta arrotolare il polpettone su sè stesso fino a chiudere i bordi. Cospargere di pan grattato sopra e sotto, trasferire il tutto sulla teglia da forno (carta compresa), condire con un filo d’olio e infornare a 170° per circa 40 minuti. Verso metà cottura girare il polpettone dall’altro lato. Si può servire appena cotto oppure raffreddare e conservare per un paio di giorni. Ideale anche da portare fuori casa.
Ma dai! Da lontano non sembrava macinato! Ma come rimane bello compatto! Mi piace sta ricetta, mi piace proprio!

Ieri ci ho provato anche io per la prima volta ed é andato benissimo.
Io sulla scarola ho aggiungo della sultanina e in mancanza dei pinole delle scagliette di mandorle tostate.
Ho cotto al forno su carta da forno girando ogni 20 minuti e spruzzando con vino bianco. E’ venuto benissmo e questa mattina a freddo l’ho tagliato a fette. unico neo: mi sembra un pó secco. che mi consigleresti come salsina?

Ciao Isab! secondo me il ‘ripieno’ di scarola dovrebbe bilanciare la compattezza della carne, comunque ci vedo bene una senape leggera, mescolata a panna o maionese per smorzarne il sapore. Fammi sapere
