Torta di Rose al Cardamomo

Non avevo mai messo il cardamomo in un dolce, nè mi era mai capitato di assaggiare dolci al cardamomo, ma vedendo qua e là un tot di ricette, in special modo in abbinamento con la frutta, e avendo fatto da pochi giorni una confettura di ramassin buona buona e molto densa, ispirata anche da certi dolci ricordi, ecco qua quel che si può definire un esperimento ben riuscito. L’impasto è lo stesso che ho usato anche qui e qui, il gusto è notevolissimo e dolce il giusto, e sfornando stamattina il profumo ha invaso il cucinino fino fuori, imponendo una gradevole e vacanziera colazione all’aperto, con tanto di yogurtino, caffè, chiacchierata, e dieci minuti di sacrosanto ritardo.
Torta di rose con confettura di ramassin e cardamomo
Ingredienti
300 gr di farina 0 (o manitoba)
1/2 bustina di lievito di birra secco (1 cucchiano di zucchero +2 di farina per attivare)
60 gr di zucchero
55 gr di burro
1 uovo
100 ml di latte
1 pizzico di sale
per farcire:
un cucchiaio di burro morbido
12 bacche di cardamomo
3 cucchiai di confettura di ramassin (o di prugne)
Intiepidire appena 80 ml di latte, sciogliervi il lievito con un cucchiaino di zucchero e due di farina e lasciar attivare per una mezz’ora. Intanto fondere il burro e lasciarlo raffreddare. In una terrina mescolare la farina con lo zucchero, incorporarvi il burro, il sale, l’uovo battuto e unire il lievitino. Impastare per una decina di minuti, aggiungendo se necessario gli altri 20 ml di latte. Una volta ottenuto un impasto morbido e omogeneo, appoggiarlo su un foglio di carta da forno e metterlo a lievitare un paio d’ore in una terrina al calduccio (ideale il forno spento appena tiepido).
Aprire le capsule di cardamomo e tenere i semini. Pestarli al mortaio oppure tritarli con un macinino.
Una volta raddoppiato stendere l’impasto sul piano di lavoro col mattarello, formando un rettangolo spesso circa mezzo centimetro. Spalmarvi il burro morbido e cospargere col cardamomo, infine spalmare la confettura di prugne (che deve essere bella soda, non liquida). Arrotolare il tutto dal lato più lungo, ottenendo un ’salame’, tagliarlo a fette alte circa 4 cm (rose) e posizionarle in uno stampo a cerniera da 20 cm rivestito di carta da forno bagnata e strizzata. Coprire con un canovaccio e far lievitare per altre 4 ore, finchè le rose non si saranno unite una all’altra gonfiandosi bene (io l’ho lasciato tutta notte).
Infornare in forno già caldo a 180° per trenta minuti. Dopo un quarto d’ora coprire con carta alluminio sennò scurisce troppo (io ho tardato due minuti di troppo :-)
A colazione è certamente un sapore inconsueto e un po’ forte, ma servita con un tè aromatico e un frutto fresco è perfetta, anche a merenda.
Uvetta cara, ormai siamo tutti abituati alle tue favolose ricette, ma questa torta è bellissima! E’ proprio ciò che ci vuole nei caldi pomeriggi estivi, magari con un buon tè freddo con cannella e menta! Che delizia!

Il cardamomo e’ ottimo per preparare il Masala tea.
Fare bollire due tazze d’acqua con 3 semi di cardamomo frantumati per farne uscire l’interno, poi aggiungere del te indiano circa 3 cucchiaini fare bollire 3 minuti , infine aggiungere il latte m( mezza tazza) e colare il tutto con un colino .. il colore e’ abbastanza carico tipo caffelatte .Vi assicuro e’ delizioso! Volendo all inizio si puo’ aggiungere un pezzentino di zenzero insieme ai semi di cardamomo. Ricetta provata a casa di un’amica indiana in un pomeriggio d’inverno gustata con ottimi biscottini allo zenzero…….
