Nel mio caso mi è stato chiesto se mi interessasse prendere un chilozzo o due di Parmigiano Reggiano 20 mesi, diviso in pezzi da circa un chilo, confezionato sottovuoto, direttamente dal produttore al consumatore. Inutile dire che ho preso la palla al balzo, e per dieci euro e cinquanta (trasporto compreso) mi sono aggiudicata un buonissimo parmigiano da tavola, morbido e gustoso, e di peso abbondante. Lì per lì ho sottovalutato la cosa ma mi sa che invece è una iniziativa da tenere ben presente, non tanto per il risparmio, ma soprattutto per la qualità eccellente del prodotto. Oggi avevo voglia di preparare dei muffin da trasferta, nel senso che prevedo di non pranzare a casa nei prossimi giorni per cui mi serviva un pasto take away, e incontrando il pezzettone di formaggio nel frigo, vi ho attinto a piene mani :-)
Muffin al Parmigiano Reggiano
Ingredienti (per 4 muffin o 6 piccoli)
1 uovo
100 gr di yogurt compatto
100 gr di parmigiano reggiano fresco grattugiato
1 presa di sale
120 gr di farina 0
1 cucchiaino di lievito
1/2 cucchiaio di semi di papavero
Grattugiare il parmigiano che essendo fresco sarà un po’ vaporoso e grossolano. Accendere il forno a 180°. In una terrina battere l’uovo con lo yogurt, salare, aggiungere il parmigiano e incorporarlo bene, poi setacciare la farina con il lievito, aggiungere i semi di papavero e mescolare ancora finchè il composto sarà omogeneo, cremoso ma piuttosto denso. Disporre negli stampi da muffin imburrati e infornare per circa 15/20 minuti a seconda della grandezza.

però è da tenere in considerazione, io normalmente prendo il grana perchè costa un po’ meno ed è più delicato, ma ogni tanto un bel pezzettone di parmigiano ci vuole. soprattutto se la qualità è eccellente come dicevi tu.
