E’ piena estate solo quando vengo via dal mercato sapendo di aver comprato troppa frutta rispetto a quanta riusciamo a consumarne normalmente, con pensieri del genere ’ma quanto peserà quest’anguria…’, ‘ma perchè ho preso tutte quelle pesche’ e ’credevo di soffrire di shopping compulsivo solo per le scarpe, e invece…’ Così, pensando alle soluzioni più rapide e alle ricette più fantasiose, trafelata e con troppi sacchetti e con i segni nelle mani, appena arrivata a casa mi telefona papy annunciandomi un esubero di frutta e verdura dell’orto di proporzioni bibliche, cui far fronte con una certa sollecitudine [immediatamente]. “Te ne vieni a prendere due o tre cassettine?” e “Falla stanotte la marmellata che sennò fa caldo in cucina, e poi la frutta mica tiene fino a domani…”

E siccome anche per quest’anno pare proprio che sia arrivata l’estate, non potevo mancare alla bellissima raccolta di conserve e confetture di Il Gatto Goloso, con dedica speciale al mio papà.

Confettura di susine gialle

Ingredienti (dosi per chilo di frutta)

1 chilo circa di susine gialle intere

1 mela

450 gr di zucchero di canna

Lavare le susine, sbucciarle e tagliarle a pezzetti in una pentola d’acciaio col fondo un po’ alto. Eliminare i noccioli e accendere sul fuoco piccolo. Sbucciare una mela (golden o renetta), farla a cubetti e unirla alle susine, aggiungere lo zucchero e mescolare bene tutto. Portare a ebollizione e continuare la cottura a fuoco lento e mescolando di tanto in tanto per controllare la consistenza. Infine immergere un minutino nella pentola il minipimer per dare cremosità. La mia ha cotto circa un’ora e mezza, le susine erano molto più succose che polpose, ragion per cui ho pensato di aggiungere anche la mela. Spegnere e mettere subito nei vasetti (ne verranno un paio da circa 300 gr ognuno) ben puliti. Chiudere col coperchio e girare ‘a testa in giù’, lasciare così fino a completo raffreddamento, poi trasferire in luogo fresco e buio oppure in frigo, dove la confettura si conserverà per circa 4 mesi. Per prolungarne la conservazione fino a un anno, sterilizzare i vasetti in una pentola d’acqua bollente per 2/3 minuti e lasciar raffreddare così.

Insieme a quella di albicocche questa è una delle mie preferite da colazione con pane e marmellata. Il pane della foto è fatto con farina di segale e semi di sesamo e di girasole, sempre perfetto per iniziare la giornata :-) La lavanda invece è solo un tocco di colore di stagione…

Pane con farina di segale

Ingredienti

200 gr di manitoba

200 gr di farina integrale di segale

150 gr di lievito madre

acqua q.b.

1 presa di sale

1 manciata di semi di sesamo

1 manciata di semi di girasole

Impastare tutti gli ingredienti e fare lievitare per circa 6 ore, rimodellare l’impasto senza maneggiarlo troppo, inumidire la superficie e attaccarvi un po’ di semi di sesamo. Far lievitare ancora per circa un’ora nel forno spento a 50°, infine cuocere per 20 minuti a 220° e a 190° per altri 20 minuti.

pane di segale e marmellata, un matrimonio perfetto.
La marmellata mi piace anche con i grissini, è una sorta di antidepressive food e mi riconcilia con la vita, nella sua semplicità.
Bisogna organizzare a fine estate, magari lì da te, una sorta di assaggio di marmellate di provenienza casalinga, una merenda pani e marmellate in enoteca…:)

Sai con cosa è anche buonissima la marmellata? Con i Digestive, ma quelli originali, i McVities… un po’ stucchevole ma secondo me è un abbinamento perfetto, si sposano praticamente con tutti i frutti. Io in frigo ho delle prugne minuscole rosse non troppo dolci, potrei riciclarle magari aggiungendo qualche spezia. Sono indecisa, perchè vorrei anche provare l’abbinamento prugna-cipolla… non spaventarti!

Proprio l’altro ieri ho fatto la marmellata di susine, ne avevo avute tante dal suocero!
PEr paura che si scurisse ho messo il succo di limone, solo che ne ho messo un po’ troppo (mezzo limone grande per 1 kg, le prugne non erano molto mature, e cosi’ e’ venuta un po’ asprigna, ma a me piace lo stesso…!!!

Ottima l’idea della mela, me ne sono dimenticata…e hai usato lo zucchero di canna, grande!! Non sapevo che venissero bene, e invece il colore della tua marmellata e’ fantastico!

che buona! questa marmellata la faceva anche mia nonna, ma senza la mela e lo zucchero di canna. Forse per questo risultava più scura.

Ciao Michelangelo, anche le marmellate di mia nonna erano più scure, mi sa che una volta le si faceva cuocere più a lungo e con più zucchero per paura che altrimenti andassero a male. A casa mia i vasetti di marmellata potevano stare in cantina anche per 2 o 3 anni mentre io non me lo sogno nemmeno di tenerle così tanto :)
