Sorbetto Estate 2008

Questa è la mia reinterpretazione di ricetta degli anni ottanta per Salsadisapa. La realizzazione è semplicissima, ma devo dire che mi ci è voluto un po’ di tempo e un bel po’ di fonti di ispirazione prima che mi venisse in mente qualcosa di adatto. Alla fine è andata che domenica scorsa sono stata a un matrimonio, tutto bello classicone, con tanto di [lentissimo] rinfresco, che di fresco aveva proprio poco vista la calura opprimente e la assoluta assenza, non dico di un bell’impianto di aria condizionata, ma anche di un semplice ventilatore a pale che muovesse l’aria nel salone gremito da centocinquanta ospiti. Era da tanto che non andavo a un matrimonio e ci sono andata volentieri, col mio vestitiello nuovo colorato, le scarpe col tacco 10 e la micro borsetta coordinata, ma mi sono per certi versi sentita ripiombare diciamo nel 1989, coi gigli bianchi e le rose blu, la band che ha suonato ‘ti sposerò perchè’ di Ramazzotti, il menù di 4 antipasti, 2 primi (memorabili le tagliatelle posillipo, con panna rucola e gamberetti) e ben 2 secondi. Nel mezzo di tutto questo mangiare, è arrivato buono come la manna nel deserto un salvifico sorbetto al limone fatto col gelato frullato e servito nelle coppe da moscato, che verso le cinque e mezza ha anticipato e gradevolmente refrigerato l’uscita del cosciotto di maiale al forno… Ora, non so quanto sia consuetudine servirlo oggi tra i primi e i secondi, ma per me era qualcosa che non vedevo da un pezzo e che mi ha immediatamente ricondotta a certi pranzi luculliani di un bel po’ di anni fa, quando imperversavano i tortellini panna&prosciutto e il petto di tacchino panna&funghi, per dire, e il sorbetto rappresentava un vero e imperdibile tocco di classe.
Questo episodio si è sommato ad un’altra situazione mooolto più interessante e completamente opposta, e cioè la lezione di Sandra sul finger food, cui ho avuto il piacere di partecipare l’altra sera. Tra le varie coloratissime e sfiziose squisitezze che la nostra Zenzerina ci ha mostrato, c’era anche un delizioso bicchierino di melone alla menta, da frullare e servire freddo come aperitivo. Ecco che le due cose si sono incrociate nella mia testolina e, passando per il melone verde che avevo in frigo e la mia pianta di basilico sul davanzale, ne è nato questo bicchierino fresco e aromatico, ideale per pulire la bocca tra una portata e un’altra, o da congelare e servire come sorbetto vero e proprio, o ancora come piacevole aperitivo prima di una cena all’aperto.
Chupito di melone e basilico
Ingredienti (per 6 persone)
1/2 melone verde (o giallo) a polpa bianca
4 o 5 foglioline di basilico (non di più, non deve prevalere)
1 cucchiaio di zucchero di canna
2 cubetti di ghiaccio
Lavare e sbucciare il melone, tagliarlo a pezzi e metterlo nel bicchiere del frullatore, aggiungere il basilico spezzettato a mano, lo zucchero e il ghiaccio e frullare finchè non sarà tutto omogeneo. Servire in bicchierini monodose guarnendo con una fogliolina di basilico fresco. Alla stessa base si può anche aggiungere un goccio di vodka e ghiaccio tritato, ottenendo un cocktail originale e moderatamente alcolico.
Beccata! Il chupito ti è rimasto nel cuore! Nemmeno io l’ho scordato, anche se il tuo è più adatto alla stagione… Ottima idea, dopo il paneer (che sta per essere fritto) proverò anche questo.
Dai, ma questo chupito è da urlo! Io ho abbinato il basilico alle albicocche! Mi rendo conto stia bene davvero ovunque.!

Il cosciotto alle 5 di pomeriggio, accipicchia, non e’ che ci hanno messo anche un po’ di citrosodina nel sorbetto????
Si, si, tanti sorbetti al limone tra il pesce e la carne nei matrimoni degli anni passati….ora fortunatamente in quasi tutti i matrimoni c’e’ solo un secondo (e se sono fortunata, quasi sempre, e’ di pesce…)

Qui durante i matrimoni (eh sì che noi di matrimonio ne abbiamo tanti ogni anno e questo non è da meno!) si usa sempre il sorbetto. Però a pensarci bene credo di averlo conosciuto proprio negli anni ‘80 :-) Di sicuro la tua versione è buonissima!
