Cake salato con salvia e zucchine

Partiamo dal work in progress. Questa foto qui è il cake prima di essere infornato, ricoperto di foglie di salvia intere che come è logico durante la lievitazione in forno si sono spostate qua e là, ma a parte questo l’esperimento mi è piaciuto, sia per il sapore sia perchè temevo che le foglie si sbruciacchiassero e invece no :-)
Il cake salato è sempre un’ottima soluzione per brunch domenicali, cenette veloci, gite fuori porta e ospiti last-minute. Facile da fare e ancor più facile da variare con ingredienti di stagione o a seconda di quel che c’è in dispensa. Ultimamente di cake alle zucchine ne è piena la blogsfera per cui mi frullava di provarlo già da un po’, e avevo anche un vasettone di yogurt bianco prossimo ad una brutta fine per cui ieri, in perfetto ritardo sulla tabella di marcia e con poche idee per cena, ho preparato questo cake morbidone e gustoso.
Cake salato con salvia e zucchine
Ingredienti
3 uova
1/2 bicchiere di latte
1/2 bicchiere di olio extra vergine +qualche cucchiaio
1/2 bicchiere di yogurt bianco
240 gr di farina manitoba
100 gr di ricotta dura (o altro formaggio della consistenza della feta)
1 bustina di lievito per torte salate
3 belle zucchine (circa 450 gr)
una presa di sale
15 foglie grandi di salvia
Lavare le zucchine, affettarle a rondelle e cuocerle in padella con olio e sale a fuoco medio e con il coperchio e mescolandole ogni tanto. Quando saranno cotte ma ancora croccantine spegnere e fare raffreddare.
Accendere il forno a 180°. In una terrina battere le uova con una presa di sale, poi aggiungere l’olio, il latte e lo yogurt e mescolare bene. Setacciare la farina e incorporarla mescolando fino a che il composto sarà omogeneo, elastico e cremoso. Tagliare la ricotta a cubetti e aggiungerli. Sciogliere il lievito in due dita di latte e unirlo all’impasto mescolando ancora, infine aggiungere le zucchine preparate prima.
Imburrare lo stampo da plum cake e rivestirne il fondo con 7/8 foglie di salvia. Versare il composto nello stampo e ricoprirlo con altra salvia. Infornare e cuocere per 40 minuti poi spegnere e lasciar riposare in forno. Ottimo sia tiepido che freddo, da abbinare ad un bicchiere di vino bianco intenso e fruttato, fresco sapido e piuttosto mordido, di media struttura e non troppo alcolico.

A mio parere sarebbe interessante, oltretutto uno degli amici ideatori del sito lattecondensato gestisce anche un ristorante a Roma!
